It's Been A Hot Minute

 Hey Y'all,

It has been a hot minute since I have posted. I have been busy with work and school. For those of you that don't know I work full-time while going to nursing school. I finally got some down time to myself and decided to work on one of my favorite recipes. Apple Crisp! There is something just about having the gooey mixture of cinnamon apples and a crunchy crust touch your lips. Some of my fondest memories of apple crisp are having family reunions or sitting by a campfire surrounded by friends enjoying a cold winter night.

For my college friends, this is a super simple recipe to follow and may even impress that special someone in your life. You can make this on those cool winter nights or on those crisp summer days. The recipe is as follows:

Individual Apple Crisp

Ingredients

Filling
*3 medium sized apples peeled and diced.
*2 Tbsps Sugar
*2 Tbsps Flour
*1 Tbsp Cinnamon

Crisp Topping
*1/4 c Brown Sugar
*1/4 c old fashioned oats
*2 Tbsps Flour
*2 Tbsps cold Butter cut into pieces.

I don't know about you but I like to make as little mess as possible. Before I start, I line a bowl with a plastic bag before I peel that way it is an easy cleanup.

Instructions
1) Preheat the oven to 375 F
2) In a medium bowl, toss the apples with sugar, flour, and cinnamon. Divide the apple mixture evenly between four small ramekins---mine made 5.
3) In a small bowl, whisk together the brown sugar, oats, and flour. Add the butter and blend using a pastry blender or your finger. I used my fingers and I think it worked just fine. It is a little messy, if you are not a fan of having messy fingers. Mix the mixture until the mixture clumps together, and the pieces of butter are not bigger than the size of a pea. Once it is mixed, sprinkle the topping over the apples, dividing it evenly.
4) Bake the mixture for 18-20 minutes or until the crust is golden brown and crisp on top. You can serve it warm or cool. You can top it with whipped cream or a caramel sauce. This is a super simple recipe to make for family, friends, and social gatherings. I usually make this for our weekly family home evening.

Enjoy!

Recipe #1: Joanna Gaines's Blueberry Muffins with Streusel Topping

For our first recipe, I thought we would stick with a breakfast staple..Blueberry Muffins. One of the reasons, I decided to start with this recipe because my dad has a love of the fruit blueberry. He loves blueberry pie, blueberry muffins, blueberry cobbler, or blueberry anything. Is your dad the same way? I decided that muffins were an easy breakfast item that are really hard to mess up, so it would be a perfect way to start our foodie journey. I followed Joanna Gaines recipe to a tee. It was super easy and really a quick way to get breakfast rolling. I would recommend making these the night before if you are an on the go type of person but if you have plenty of time in the morning to make your family breakfast, then you can make these the day of.      The first step was to make the streusel topping and it was super simple and easy, that anyone could do it. Ladies, that even means your husband, boyfriend, dad or brother, even with some guida...

Introduction to the Foodie Fridge

Welcome to the Foodie Fridge! I'm Mikenzie and I'm the founder of the Foodie Fridge. The Foodie Fridge is a place where you can find recipes from the greatest cooks done by yours truly. We can either see if I nailed the recipe (#nailedit) or if it was a total flop. We will work through different cookbooks such as Joanna Gaines, Ree Drummond, and many others. One of my favorite quotes about cooking is from, the renowned Julia Child, "No one is born a great cook, one learns by doing." This is what this journey or blog is about learning different recipes by trying them out, tweaking them to fit my style, and sharing with the greatest tribe how they turned out. Who knows, maybe one of the recipes will inspire you to start cooking?  A little about me: I am from Texas. I am a teacher turned nursing student. I love anything to do with the outdoors such as shooting, hiking, or exploring what nature has to offer. I'm a classy, sassy lady with a heart of gold and a ...
