Hey Y'all,
It has been a hot minute since I have posted. I have been busy with work and school. For those of you that don't know I work full-time while going to nursing school. I finally got some down time to myself and decided to work on one of my favorite recipes. Apple Crisp! There is something just about having the gooey mixture of cinnamon apples and a crunchy crust touch your lips. Some of my fondest memories of apple crisp are having family reunions or sitting by a campfire surrounded by friends enjoying a cold winter night.
For my college friends, this is a super simple recipe to follow and may even impress that special someone in your life. You can make this on those cool winter nights or on those crisp summer days. The recipe is as follows:
Individual Apple Crisp
Ingredients
Filling:
*3 medium sized apples peeled and diced.
*2 Tbsps Sugar
*2 Tbsps Flour
*1 Tbsp Cinnamon
Crisp Topping:
*1/4 c Brown Sugar
*1/4 c old fashioned oats
*2 Tbsps Flour
*2 Tbsps cold Butter cut into pieces.
I don't know about you but I like to make as little mess as possible. Before I start, I line a bowl with a plastic bag before I peel that way it is an easy cleanup.
Instructions:
1) Preheat the oven to 375 F
2) In a medium bowl, toss the apples with sugar, flour, and cinnamon. Divide the apple mixture evenly between four small ramekins---mine made 5.
3) In a small bowl, whisk together the brown sugar, oats, and flour. Add the butter and blend using a pastry blender or your finger. I used my fingers and I think it worked just fine. It is a little messy, if you are not a fan of having messy fingers. Mix the mixture until the mixture clumps together, and the pieces of butter are not bigger than the size of a pea. Once it is mixed, sprinkle the topping over the apples, dividing it evenly.
4) Bake the mixture for 18-20 minutes or until the crust is golden brown and crisp on top. You can serve it warm or cool. You can top it with whipped cream or a caramel sauce. This is a super simple recipe to make for family, friends, and social gatherings. I usually make this for our weekly family home evening.
